The £2,000 grant we received from the Edinburgh Bakers Trust in 2020, which played a crucial role in our transition from a domestic operation to a fully equipped commercial unit at Morris Park.
The funding was a catalyst for our continued growth five years later, enabling us to scale up production, improve efficiency, and establish a strong foundation for sustainable expansion.
Since moving into our commercial space, we have achieved several key milestones:
• Business Growth: We have expanded our wholesale operations, now supplying over 50 cafes, restaurants, and mid-sized businesses across Glasgow.
• Production Development: With access to better equipment and space, we have refined our sourdough production, introduced new bread varieties, and improved overall product consistency.
• Industry Recognition: We were honoured to receive Silver and Bronze Awards at the Scottish Bread Championship, a testament to our commitment to quality and craftsmanship.
• Baking Education: We have launched Wheatberry Baking Studio, where we teach professional and home bakers the art of sourdough and laminated pastries, further embedding ourselves in the Scottish baking community.
Now that our business has expanded, even to include a baking school, we still attribute much of our success to the support we received at the very beginning, as it paved the way for everything that followed. The Edinburgh Bakers Trust’s funding gave us the confidence and contributed to the resources we needed to take that first significant step, and we are incredibly grateful.
